Crust-less Quiche

This is oh, so good and perfect when you're having one of "those" days!  I doubled the recipe for my hungry family and served it with sides of salsa and sour cream.

I doubled this recipe and baked it in a 10"x14" pan

Crust-less Quiche

Ingredients:
8 whole eggs
2 cups cheese, grated -use whatever you like!
1 cup milk
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 pound bacon, ham, or sausage, or any combination thereof
1 cup broccoli, lightly steamed and chopped - Optional

Directions:

Preheat oven to 375 degrees. Prepare pan an 8-inch square Pyrex dish by spraying with non-stick cooking spray.

Cook meat of your choice and drain fat. Cut or crumble into small pieces.

Beat eggs.  Add cheese, milk, and baking powder. Mix well. Stir in meat and broccoli . Pour into prepared pan. Bake for 35-40 minutes, or until toothpick insert in center comes out fairly clean. Do not over bake--the quiche will continue to cook some from residual heat after you remove it from the oven.
