Ice Cream "DIBS" -or- Bon Bons

Mercy, it's hot.

It was 104* on Saturday and at least that today. And for everyone who attended the High Priest social at Hagan Park on Saturday evening, I think we all can all agree that it felt more like 110*! {thank heavens for the train rides through the sprinklers}

So, if you are like me and you think you can’t take the heat anymore, pop one or two of these out of the freezer and cool yourself down!

So super easy to make and they taste like DIBS - "munchably small and delicious!" - hey, that may be my new mantra.

Ice Cream "DIBS" -or- Bonbons
Adapted from Everyday with Rachael Ray June/July 2008

Makes 25

1 pint ice cream, any flavor
25 Nilla Wafers
2 cups milk chocolate chips
½ cup chopped nuts, any kind

Place the cookies flat side down on a parchment-lined baking sheet. Top each cookie with one small scoop of ice cream. Freeze until hardened, about 30 minutes.

Meanwhile, in a double boiler, heat the chocolate. Once melted, dunk each of the bonbons into the chocolate to coat and return to the baking sheet. Immediately sprinkle nuts on top. Freeze until firm. Keep stored in the freezer.
