I went to our local Farmer's Market recently for large strawberries to dip in dark chocolate. But all I found were these with white spots on them. They were large, but they didn't look ripe to me. They looked sort of yucky. I told the farmer as much and he said that the white spots are actually called white shoulders because they got too much rain. He also said that they are perfectly ripe and delicious. I wasn't sure if I believed him or not.
Well, I'm glad I trusted him and purchased my berries with white shoulders. Because you know, they were absolutely delicious! And my dinner guests agreed.
Success.
