Easy Sweet and Sour Meatballs or Chicken

Tons of recipes being posted lately. What can I say? I love to cook.

Sweet and Sour Meatballs (or Chicken)
Yield: Serves a crowd of 8-10
1/3 bag prepared Meatballs (I use a bag from Costco) or you can substitute diced chicken - use dark meat for most flavor
1/2 cup vinegar
2 cups ketchup
1 ½ cup brown sugar
2 tsp. salt
2 tsp. pepper
Dash cayenne pepper
1 tsp. garlic powder
1 20 oz can pineapple chunks, drained
½ red bell pepper, diced in chunks
½ yellow bell pepper, diced in chunks
½ green bell pepper, diced in chunks
1 medium white onion, diced in chunks
½ c. carrots, diced on an angle

Mix sauce ingredients together in a deep sauté pan. Once sauce has reached a low boil add all vegetables and  meatballs. Allow to simmer 15-25 minutes or until ready to eat. 

This is a favorite at our house.  We like it served over steamed rice.
